Nutmeg is known for its warm, spicy aroma and frequent use. You can often find it in pumpkin pies and cakes, but it can also add that extra flavor to sweet and savory dishes. Nutmeg is especially suitable for creamy or cheesy dishes such as lasagna, creamy spinach and mashed potatoes (with lots of butter). Add freshly grated nutmeg to custards, pancake batter and banana-based desserts. Stir some through your chocolate mousse. Sprinkle grated nutmeg over hot chocolate or an espresso. Taste it. Smile. Take some more. Nutmeg should be freshly grated - not ground - on hot foods at the end of the cooking process. This way you retain the taste of the fresh oils.
